Is there any nights that you just don't feel like eating a lot?
This is salad is not much effort at all, still tasty and great for a light dinner.
Skin and cut sweet potato into 1" chunks.
Steam for half an hour, and then roast till slightly brown
Soft boiled egg wedges.
Smoke salmon slices
Chopped tomato, parsley and cucumber salad drizzled with olive oil and balsamic vinegar.
