We do prefer fresh fruits most of the time. This year, we had plenty of peaches. However, as the season ends, I found maybe, I want a bit more of the peaches for dessert... Well, we always have the cans.
Anyway, this is a very simple gelati, that we enjoyed after dinner the Saturday night before and we used it on the banana pancakes the next day morning.
Peach Gelati:
825g Can of Peach in Syrup
250ml cream
4 tablespoon sugar
Put peach together with syrup in a medium saucepan with sugar, over low to medium heat, slowly bring it to boil, turn to low heat. Add cream and gently cook till gentle simmer, turn off heat.
The canned peach slices are not likely to break like the fresh ones, so need to mash it up when it's soft. Cool the mixture till room temperature, and chill in fridge 2 hours before serving dessert. Once cooled down a bit further, churn in icecream maker.
To serve, we used
Chocolate Sauce and Almond Flakes:
100ml fresh cream
80g milk chocolate
Warm up fresh cream, either in a small saucepan over low heat or use microwave. Pour over chopped up milk chocolate, stir and mix till smooth.
25g almond flake, toasted.
Banana Pancakes:
1 Ripe banana, mashed
2 eggs
200g self raising flour
4 tablespoon white sugar
300ml Milk
30ml canola oil
Bring milk to room temperature. Whisk eggs with sugar, slowly mix in the oil and milk, until smooth and add in the sifted flour and bananas. Leave the batter for around 30 minutes and make pancakes on non stick pans over medium heat.
Scoop gelati on pancake stacks and drizzle with honey.

A Super Easy Coffee Pancake
Coffee flavoured pancakes are not hard to make. This one is super easy. I made them 2 weeks ago, and all because...
Hubby bought some Big M, iced coffee flavour, naughty him. He's the only Big M fan at home, or any type of flavoured milk, so buying a 2 litre bottle, was a struggle for him, he bought the big bottle because that was on sales. So, how to make the iced coffee milk accepted by everyone else? Pancakes.
Big M Iced Coffee Pancakes
180ml Big M Iced Coffee
20g butter
1 egg
100g self raising flour
1/2 teaspoon bi-carb soda
Monique loved it but she could only take 2,

Cheesy Zucchini Pea & Potato Pancakes - How to Make Fussy Little Eaters to Eat Veggies...
I grate vegetables into my pasta sauces, so children will eat some veggies they normally don't eat. Veggies haven't been their favourite food, but they have been good with some of them, broccoli, lettuce, cucumber, tomato, carrots, some times, and they normally love peas.
They are not too keen on zucchini, so it's time to hide it, again. I have got some left over mashed potato so I put in as well. It's simple, tasty and ready in half an hour.
Cheesy Zucchini Pea and Potato Pancakes:
Make 6-8 depending on sizes
2 eggs
1 cup milk
pinch of salt
white pepper
1/2 cup self raising flour
1/2 cup mashed potato
30 ml extra virgin olive oil
1 cup finely grated zucchini
1/2 cup peas (frozen or fresh)
1/2 cup of shredded cheese (I used a mixture of mozzarella and cheddar)
Extra vegetable oil to fry.
Method:
Beat eggs with salt, add olive oil and milk.
Sift in flour, mix well till smooth, add white pepper.
Fold in the veggies, zucchini, potato and peas, and the cheese.
And the pancake batter is ready.
Add a bit of salad and my 4 year old loves tomato sauce with her frankfurt.... We have to cut it up for her, she's still not confident with her knife...

Banana Pancakes with Apple and Rhubarb Syrup
I did wake up a bit early this morning, wasn't the best weather for cooking, but it was humid and warm and I couldn't sleep well.
So I end up making pancakes for the family for brekky. I have some very ripe bananas, lots of apples and got some rhubarb stalks on sales the day before.
If I'm making sweet brekky for the family, I'd like to make sure they have some fruits.
Spiced Apple & Rhubarb Syrup
3 stalks of rhubarb, cut into chunks
2 royal gala apples, pealed and wedged (can be red delicious, pink lady etc)
2/3 cup of raw sugar
1 tsp cinnamon powder
1 tbsp golden syrup
enough water to cover half of the fruits
The method is pretty simple. Coat the fruits well with the cinnamon, sugar and syrup, add water and bring it to boil. Simmer for a couple of minutes until the rhubarb is soft.
Banana Pancakes
2 large eggs
1 ripe banana
50g butter
4 tbsp white sugar
1.5 cup milk (approx)
200g self raising flour
Bit of olive oil for the pan
Beat eggs with sugar until it turns pale. Beat in softened butter.
In another bowl mash the banana, add room temperature milk.
Add the mixtures together and mix well.
Sift in flour, and add a bit more milk if needed the consistency should be just coating the back of a wooden spoon.
Serve pancakes with softened apple and rhubarb and syrup, and dollop of whipped cream (with a bit of icing sugar).

Beef Stroganoff – My way, with Potato Pancakes
A quick and easy meal idea again - from Thursday night actually.
Ok, this time it's not the traditional recipe, I just used whatever I have on hand.
Beef Stroganoff
500g Heart Smart Beef Fillet Steaks
2 small onions, sliced
200g mushrooms, thinly sliced
1 tbsp plain flour
1 tsp white pepper
½ cup white wine
1 tbsp salt
1 tsp raw sugar
1 tsp all spice
1 tbsp dry mixed herbs (use fresh thyme, parsley and dill chopped fine if there’s any on hand)
2 tbsp thick Greek Yoghurt (use sour cream if you have them)
Method:
Cut steaks into 2mm thin stripes, toss in flour and white pepper mixture.
In a non stick frying pan, heat up some cooking oil (use butter if you want, but cooking oil or olive oil is my choice of healthier diet), brown onions and add beef stripes, lightly brown, about 2-3 minutes.
Add salt and herbs and all spice.
Mix well and caramelize meat further, deglaze with wine.
Mix in mushrooms and cook for a further 2-3 minutes
Add yoghurt and sugar. Mix well, cook for another 2-3 minutes and it should be ready.
Potato Pancakes
6 Medium starchy potatoes
150g plain flour
1 tsp white pepper
1 tbsp salt
1 tsp nutmeg
125ml milk
1 knob of butter
Method:
Boil the potatoes in skin, cool in colander, remove skin.
Shred potatoes.
Prepare flour batter with flour, pepper, salt, melted butter and milk.
Mix in shredded potatoes, should still be quite chunky.
Heat some cooking oil in pan, 1 tbsp at a time, and drop ¼ cup of batter in for a big pancake or 1 tbsp of batter in for a smaller pancake.
Brown both sides.
The healthy cut of the beef is very tender, and it's nice even though it's not "tradition".....

Banana Pancake with Poached Pear in Cinnemon & Sherry, A Quick Greek Style Sausage Bake
Recap of the breakfast on Sunday... Our family tradition now as the children look forward to their pancakes....
So I made banana pancakes - big size ones yeah? Just good to have one each, although the 10 year old did ask for the second one! I normally make some syrup to go with pancakes, and the syrup I made was from half raw sugar, half white sugar, nashi quarters de-cored, added cinnemon and sherry.... Everyone loved it, the children even ate the pears... so hard to get them to eat fruits...
Recap for last Saturday's dinner, a quick Greek Style bake dish with sourdough and home made hummus dip. Layered grilled egg plant, skinless beef sausages marinated in cumin, clover, nutmeg poweders, oregano, parsley and mint. add on sundried tomatos and fetta cheese, a quick & easy dish, and the only hard work was grilling the egg plants...

Anyway, this is the never fail on me Sourdough.... lovely hummus dips as well.
