As a light meal or share as sides, this is rather filling to be treated as just a salad.
Roast pumpkin cubes, smoked salmon pieces, couscous cooked with olive oil and water, but I blend in raisins, baby spinach, semi soft boiled eggs in wedges, olives and cheese.
I used a rather sweet dressing, with 1 heap table spoon of honey, juice of half of lemon myer, balsamic vinegar, olive oil. Salt and pepper to taste...
